How can I cook a pot roast in only a couple of hours? Any advice?

I am using celery, onions, potatoes and carrots. Can I sear the roast in a pan and then bake it for only 2 hours? What temp would I set my oven to cook it this quickly? Will it still be tender??How can I cook a pot roast in only a couple of hours? Any advice?
Searing it is a great idea. Preheat oven to 375 degrees, place seared roast, celery, onions and a cup of beef broth in your baking vessel. Cover tightly and cook for 1 1/2 hours. Remove from oven and place quartered potatoes and chopped carrots to cook until tender; about 45 minutes. If you initially put your potatoes and carrots in, they will be mushy. But if you like them like that, then add them at the beginning.

Sear the roast in a pan, Instead of transferring it to a roaster in the oven, leave it in the pan on top of the stove. Keep a close eye on it and add water as needed. This way you can cook with the higher heat which will speed up the cooking . It should be tender enough in the two hours. Add the veggies the last 30 to 45 min.
You're on the right track. Sear it on all sides first, then leave it on the stove for several hours after adding your vegetables.





A nice addition is a bottle of relatively inexpensive red wine (merlot or cab is fine). Pour it right in with the vegetables. The wine and the meat make for a great stew sauce. I don't recommend the oven, just leave it to simmer on the stove on low to low/med for a few hours.
